Don Labruzzo owns a shop over there called Deep Exposure that has boosted O2 and trimix. He has a very comfortable boat that does nice long days with lunch included not cattle boat dives. We were doing 2 90 minute dives every day.
If you are going to dive caves on the mainland without a doubt Protec is the only way to go either in Playa or Tulum.

Exactly what Dave said. Go with Don and Deep Exposure for tech and RB diving. Matt & Protec are great if you cross to the mainland for good cave diving. And to echo what others have said, there is some limited cave diving on Cozumel and no one knows it better than German Yanez.

And the water in the New York area is cold and dirty right now.

    + 3 on German
I did cave diving and was very happy. He provided tanks
Transportation and staged o2 for safety stop. German can also provide hyperbaric oxygen for rebreathers. Please test all gas for oxygen content and CO. Most places use a gas farm to fill tanks.

The Cenotes are a must do and the Cozumel shops all can connect you to a cave/cavern dive. Aldora is my favorite on the island (great staff and high capacity tanks) while ProTec in Playa Del Carmen is the best for a cave experience. You just grab the early ferry from Cozumel, walk to the shop in Playa, gear up and it is a half hour van ride south to the Chac Mool cenote park.
No cave certification is required and although you do have brief time in overhead passages it is pretty benign. Of course most any cave can get you in trouble if you insist on leaving the line. Three cave divers died at cenote Chac-Mool

If you want an off-gas activity for your last day you cannot beat swimming with the whale sharks off Isla Mujeres. .EcoColors Tours - whale shark adventure | Eco-Hub MexicoEco-Hub Mexico. It is a long day (ferry plus van plus boat ride- maybe 6 hours traveling round trip) but an amazing experience. My only advice is to pack your jet fins because those big sharks only look slow until you try to keep up with them.

Here's a roundup of Aldora Divers:
