There is quite a bit on hypoxia and oximetry in the altitude and aviation research. Acclimatization to altitude has some good stuff on changes that occur there < International Society for Mountain Medicine >. (Our most recent work has been looking at NO changes with acclimatization to 15k of altitude, only published as abstracts so far.)

There was also some interesting work on oximetry and hypothermia here a while back: The desaturation response time of finger pulse oximeters during mild hypothermia. Macleod et. al. Anaesthesia. 2005 Jan;60(1):65-71. PMID: 15601275
