Hello, A lot of this is covered in the Help file included with the program - press F1 for samples.
To change the set point only, (or mix only), without an actual stop or level, enter a new leg (level) with a time of 0 (zero). This then tells the program to make a change in setpt, etc without stopping there.

Controls your OC deco mixes selection depth. The program will select your OC deco mixes based on these ppO2 values you selected here. Depths can be overridden in the front OC deco column with a specific depth. Quote:
