I think that standards have different limitations regarding mixes and gas usage for very logical reasons and I wouldn't want to exceed my limitations as a diver whether I'm diving OC or CCR. However, knowing "why" is always important even if the diver won't use any advanced knowledge within his/her course but it would develop a good sense of realization and therefore the diver will have a better safety planning. There are many people who would exceed their level of training with their experience but I think if you are ready to do it on your own then why wouldn't you get yourself into a proper course then you will find out what you are missing. At least in case of any problem you will be covered by your insurance as long as you are certified to that level
