Why use butterflies? Just take a normal one, sure you need a wrench to get it of but so what? They aint that big...

regarding the butterfly nuts, you are right. i just remember seeing somewhere a while ago, some very big but thin in width screws, that were perfect for this. maybe cut a bit the inside screw from the STA but that is ok...
