A bit late to the game, but another vote for Dave Cooper.
Very experienced instructor (been diving Rebreather's for over half his life...
), very straight forward guy and makes you work for your cert so don't expect an easy ride.
The upside to that though is that you'll know your stuff by the end of the course.
Oh and the bonus is that he's a really really good laugh.
Just try and keep him away from KFC or McD's.....
